Well, well, well! Looka here, looka here! I’m in my 22nd week of AIP! Awww yeah! And feeling GOOD!
My last post discussed reintroductions, pending appointment with my endo and clothing. No new reintroductions yet. I really want to try eggs, but I’m going to wait until I can get them from my sister. I’d also like to try peanuts. I miss having little, good for me, snacks. I mean, I snack – don’t get me wrong, but I would like some peanuts. I’ll keep you posted.
I did go to my endo appointment. My labs were FANTASTIC! My endo was pleasantly surprised. I told him that I started AIP and that it was AIP that caused the major changes in my labs. To my disappointment, my endo kind of brushed that little tidbit of information off and told me to, “keep doing what I’m doing.” Really, Dude? REALLY?!? AIP is what has been helping the MOST with my autoimmune disease. It drives me straight CRAZY to know that he is not thinking outside the box and NOT asking me more questions about AIP. Doesn’t he realize that he could help others?!? GAAAAHHHHH!
OK – rant over. Methinks it’s time to find a new endo. Don’t get me wrong. I like my current endo, however, I just might need more warm and fuzzy and willingness to think outside the box.
Now, back to the clothing part of this. I’m losing weight. Regularly. Weight loss means that I can no longer wear some of my clothes because they are TOO BIG!
Of course, I am ecstatic about the bonus weight loss, but I get real anxious and nervous about it too. What if it comes back? I mean, as long as I’m eating AIP, I should be fine right? I still worry. The weight loss is odd to me. I’ve been an 18 FOREVER. I’ve also been active forever with virtually no results. Eating differently, for my AI issues, has made all the difference. I need to own that. Seriously. I do sometimes, but not often enough.
I said that I would start posting some of my favorite AIP recipes here too. The first one I’ll share is a Chicken Coconut Curry Stew. I know, I know – AIP curry?! It’s possible and GOOD! The one suggestion I’d make is to NOT sautee your vegetables in coconut as the recipe calls for. Honestly, the vegetables sautéed in coconut oil added too much of a coconut taste for me. Overall, the dish was amazing and totally tasted like curry even though there were no seed-based spices used! Enjoy!
